Caciocavallo cheese (cacio = cheese, cavallo = horse) gets its name from the way in which the cheese is hung in pairs as saddlebags over a stick.
The cheese is made from cow's milk and is wrapped around a wooden spindle. The cheese is drop-shaped, has a very thin and smooth crust and has a straw yellow color.
