"Casera DOP and Bitto" the excellence of Valtellina's Cheeses
The Valtellina Casera DOP is made up of partially skimmed cow's milk coming from 2 or more milkings. Together with the Bitto DOP it is among the most known and appreciated cheeses in Lombardy. It has cylindric shape and it weights from 7 to 12 kg, its crust is straw yellow coloured, its paste has compact structure and presents thin and spread holes. Depending from the aging the colour of the paste varies from white to yellow. The Valtellina Casera DOP is a sweet taste cheese endowed with the characteristic taste of milk and a shade of dried fruit that becomes more intense with the aging; it is great as a main food or grated as well if it is well aged. It is a fundamental ingredient for the traditional Valtellina's Pizzoccheri, the Cornmeal Mush with cheeses and for the Sciatt eil Taroz.

The cured-meats of the Farming Company Ferrari don't contain any pepper(both sweet and hot), this recipe isn't part of our production in order not to alter the taste of the meat. The pepper is only present in the 'Nduja.

Butter from the red cow and more... Azienda Agricola Frascio
The butter is made from raw milk of the red heifer by centrifuge. Perfect in the mouth, palate, in cakes, in the kitchen. The Frascio farm was founded in 2005 from the idea that we make our cheeses exclusively from milk from our own production. The focus of the operation is the breeding of the red heifer, which is strong and resistent to diseases. Currently, the cows are kept on pasture, so they can move freely during the summer months. For milking they come for hygienic reasons into the barn. They are fed with hay from the Valle Sabbia. We produce cheese, cream cheese, Robiola, Primo Sale, butter, yogurt, desserts and ricotta from this milk.
