We use only buffalo milk of cows from selected buffalo breeders of the Sele Plain in Campania for the artisanal production of our mozzarella.
The milk is collected daily and subjected to strict quality checks to verify the acid, fat, protein and lactose content. Furthermore, the milk is tested for contaminants and used only if the values correspond to regulations.
The artisan cheese-factory Esposito produces each day hand-made cheeses using the traditional methods.
This is why the buffalo mozzarella is very different from industrial products.
