The delicate sound of bubbles, which gracefully climb to the mouth of the glass, releasing a sensuous bouquet. They softly caress the palate and slide silkily away, bestowing ecstatically pleasurable sensations. Pure Chardonnay, through careful selection, yields a Franciacorta of rare elegance.
DOCG Wine
Production zone: Franciacorta (Brescia), from proprietary vineyards located in Pro- vaglio D’Iseo, Gussago, and Monticelli Brusati.
Blend: 100% Chardonnay
Yield per hectare: 80/95 Quintals/Ha
Planting Density: 4000-5000 vines per hectare, trained to the spurred cordon system. Vineyard Management: Complete, sown ground cover. Natural, organic fertilization. Biological pest control.
Terrain characteristics: Hillsides and at the base of hills. The soils are primarily clayey and marly, with naturally occurring minerals and microelements. South-southwest exposure. Harvest: The harvest takes place rather early, to obtain grapes with the proper sugar contents and acidities, while capturing as much floral and fruit aromas as possible. The harvest is by hand, in baskets, with grape selection on the vines.
Vinification: Soft-pressing of the whole grapes with pneumatic presses. Natural clarification at low temperatures. The first fermentation is in steel tanks at controlled temperatures (18 C).
Aging: The wine is bottled in the spring following the harvest; refermentation is in bottle with selected yeasts, followed by aging on the lees for at least 30 months in the estate’s underground cellars, at constant temperatures ranging between 12 and 15 C.
Available in 0.750 liter and Magnum (1.5 liter) bottles.
Best drunk after 3-4 months have passed from the time of disgorgement.
Tasting notes and food-wine pairing: Straw yellow. The nose displays elegant floral accents, fresh fruit, and yeast. Fine persistent bubbles caress the palate, exalting the wine’s alluring softness and elegant structure. Pleasant, persistent finish. The wine’s silkiness makes it perfectly suited to steamed fish, or delicate fish or vegetable- based first course dishes. Also excellent as an aperitif.
