The Primitivo di Manduria "Papale" of the Varvaglione 1921 winery is an excellent complex and enveloping Apulian red wine with a deep ruby color with beautiful purple reflections. Primitivo di Manduria "Papale" DOC is a red wine that has its roots in history. In Manduria, in the Contrada Papale, around 1700 rows of Primitivo were cultivated for the production of a wine for the Holy See. The vineyards were owned by Benedict XIII, the only pope of Apulian origin, to whom this fine and elegant wine is dedicated. The Varvaglione winery, a company that has made excellence its trademark, cultivates Primitivo grapes in old selected vineyards near the Ionian Sea. The pedoclimatic conditions of the area are perfect for the cultivation of Primitivo. The soil is sandy and characterized by a good presence of clay which retains water and releases it in the warmer months. The climate is dry and often drought, an ideal condition that avoids any problem of grape mold.
Primitivo di Manduria "Papale" DOC is the result of a production process aimed at the full varietal expression of the grape of origin. The manual harvest takes place in September. The clusters are brought to the premises of the company where they undergo maceration at a controlled temperature. After the malolactic fermentation, the must is aged in French oak barriques for at least 8 months, a period during which it takes on refined aromas and aromas released by the continuous exchange with wood. In the glass it reveals a deep dress, where the ruby red is illuminated by splendid purple reflections. The nose is seduced by intense echoes of black currant, blackberry, cherry, cocoa and licorice. The sip is round, soft and persistent. Excellent as a wine for the whole meal, it particularly loves combinations with red meat.
