The EULALIA I.G.T. white wine is made of Vermentino, plus a small quantity of Colombana. Most of the inclines expose to the south and are approx. 100 meters above the see-level. During the first 12 hours of fermentation we leave the grapes and the juice together, at a constant temperature of 10° C. Afterwards the juice ferments alone, without the coat of the grapes, for about 15 days at 16° C. The wine rests in the tank until March of the following year, when we bottle it, using the latest technologies for a max. quality. Our Eulalia is prodocued with biological grapes.
We suggest a wine-temperature of 8/10° Celsius for drinking the Eulalia.

Vermentino is one of the main protagonists of summer dinners, a fresh and fragrant wine, but not for this reason with a less interesting easy taste. There are different areas of production, and each one provides different peculiarities to the vine, in this case we are talking about the Tuscan Vermentino. Normally considered a wine ready to drink and to be consumed in a short time, it can show instead to be endowed with longevity. An example of both attitudes are the Vementino Guado al Tasso Bolgheri 2019 and the Vermentino Elulaia by Podere Spazzavento 2012 (50% composed of vermentino), tried in recent days during a dinner and still in splendid shape.
