From the vineyard, the Chardonnay crates are placed in a refrigeration cell which has a temperature of 4°C, for the duration of 24 - 36 hours. The grapes cool down and reach a temperature of 10°C (50°F). This process allows a better extraction of varietal aromas. Cooled grapes are brought to the press for the soft pressing of whole bunches, from which is extracted no more than 50% of the free run must. Then the fermentation, controlled at around 16°C, takes place for 70% in stainless steel tanks and for the remaining 30% in barriques and tonneaux. In the fermentation tanks, the must matures and partially undergoes malolactic fermentation. The cuvée includes small percentages of wines from previous vintages.

FACE: Brilliant straw yellow with golden reflections
BOUQUET: Evolved and very intense with hints of ripe pineapple, white peach and dried fruit. In the finish the green spice is mitigated and enhanced by the intense notes of mountain honey
FLAVOUR: Clear acidity with important mineral flavor, full and satisfying
SERVING SUGGESTIONS: Recommended throughout the meal with rich foods of the Italian gastronomic tradition: cotechino or leg of pork, but also with roast pork. Excellent at the same time with sushi and sashimi. Try it with buffalo mozzarella or fresh cheese.
