From the vineyard, the Chardonnay crates are placed in a refrigeration cell which has a temperature of 4°C, for the duration of 24 - 36 hours. Grapes are cooled down and reach a temperature of 10°C (50°F). This process allows a better extraction of varietal aromas. Cooled grapes are brought to the press for the soft pressing of whole bunches, from which is extracted no more than 60% of the first pressing must. Subsequently fermentation takes place at a temperature ranging around 16°C (61°F). Maturation on yeasts lasts about 6 months and is done in stainless steel tanks. Part of the base wines that will form the draft cuvée undergoes malolactic fermentation.
AGING IN BOTTLE ON THE LEES: From 48 months.
FACE: Brilliant straw yellow.
BOUQUET: The biscuity note in the opening evolves towards the sweetness of acacia honey, candied fruit and beeswax.
FLAVOUR: Fresh, balanced and slightly citrusy on the palate. Good persistence.
GASTRONOMIC PAIRING: Ideal as an accompaniment to the aperitif or the entire meal. Try it with structured first courses such as baked pasta and richly creamed risotto. Interesting is the combination with raw sea food.
