Castelvecchio Cabernet Franc Carso - 2021
|
Cabernet Franc di Castelvecchio is a red born near the Isonzo, aged two years both in French oak barriques and in large barrels. It has inviting herbaceous hints of the Mediterranean scrub, sage and bay leaf, pepper and tomato, black pepper, cinnamon and tobacco. The sip is fresh, particularly and pleasantly savory, with a long persistence and a good taste-olfactory consistency, which also refers to tobacco and wet earth.

DESCRIPTION OF CABERNET FRANC
Cabernet Franc di Castelvecchio is a red wine in which the typical notes of the varietal, the herbaceous ones, gradually fade towards ethereal and composite tones. A linear and classic label, in which the starting grape is respected in its integrity, and the aging of the wood is therefore limited to increasing its personality without ever covering its soul. On the table it finds its gastronomic consecration in combination with a land menu: try it with recipes based on game and you will be pleasantly surprised.
Cabernet Franc comes from the grapes of the vine of the same name, grown in different areas within the Karst National Park. We are in a particular terroir, characterized by a subsoil of limestone and red earth rich in minerals, on which the typical Bora wind blows, responsible for the strong temperature variations between day and night. The bunches, once the harvesting phase is over, are de-stemmed, and the berries start to be gently pressed. The must obtained spontaneously ferments - thanks to the presence of indigenous yeasts - in stainless steel tanks. The wine is then transferred for final aging in French or Californian oak barrels and in large Slavonian oak barrels for a total of 24 months.
Cabernet Franc Castelvecchio presents itself to the eye with a typically ruby color, characterized by a particular brilliance. The typical herbaceous note of the varietal spreads persistently on the nose, enriched in its evolution by more tertiary touches. On the palate it is of excellent structure, with a round and wide sip, concentrated and developed on a gentle tannic texture, of great softness. A generous, maliciously captivating label, capable, year after year, of winning the critics of the main national trade magazines.
