Grapevine: 100% Brachetto.
Vineyard: owned next to the farm.
Exposure: south.
Type of training: Guyot with a Piedmontese bow with an annually renewed fruit head.
Harvesting period: second week of September, carefully selecting the grapes.
Vinification: after destemming and crushing the must is macerated with the skins at controlled temperature for 1 / 2 days in order to extract the color. Then the racking takes place to separate the skins from the must in order to continue the fermentation in autoclave thanks to which part of the gas produced is retained, thus generating the characteristic perlage. The fermentation, carried out by selected yeasts, takes place at a controlled temperature and lasts about two weeks.
Refinement: short bottle period.
Organoleptic characteristics:
Colour: ruby red with pinkish reflections;
Bouquet: fragrant and aromatic with clear hints of raspberries, cherries and strawberries;
Taste: delicately sweet, fruity but not cloying thanks to a well-balanced acidity with residual sugar.
Tasting temperature: 8-10 degrees.
Pairings: it goes well with dry pastries and desserts based on fruit, cream and chocolate. Very pleasant as an aperitif and as a thirst-quenching drink at any time of the day.
