Native yeasts and spontaneous fermentation, maceration for about 5 weeks and aging in large wood for approximately one year, then another year in glass.

Tasting notes: A vibrant violet in the glass. Aromas of cassis, raspberry and licorice. In the mouth, full-bodied and abundant, with more notes of black fruits combined with a herbaceous touch and pronounced minerality. A richly structured red with well-integrated tannins.

Pairings: Ideal with red meats, cheeses
