Tasting notes: Vigorous bubbles. Typical yeast and cracker notes on the nose with lively citrus rind and a salty marine undertone are also evident. On the palate it manages to be both refreshingly vibrant and dry at the same time. Brilliant effervescence with rich creamy lees from its time in the bottle, with clear notes of brioche and toast competing with lively flavors of grapefruit and citrus.

Pairing: Excellent as an accompaniment to yogurt mousse with poppy seeds, baked apples with yogurt sauce or elderflower yogurt ice cream with lemon balm.
