Crescenza (Stracchino)

Crescenza, also called Stracchino, is a creamy, short-ripened, fresh soft cheese.

Especially in the Lombardy many soft cheeses are made. Crescenza is probably the one that is best known, because it is so versatile.

PROPERTIES OF CRESCENZA

This cheese has no crust and a moist, white surface. The dough is white, soft and very creamy.

RECOMMENDATIONS

Crescenza is particularly versatile. As a table cheese to bread, as filling for quiche and focaccia. Goes well with salad and vegetables. As an ingredient for pasta sauces with vegetables. Excellent as a companion to mustard fruits with a glass of white wine or light beer.
