Parmigiano Reggiano DOP from Caseificio Gennari in the "disolabruna" quality was the winner of 1st prize in the Brown Cows category at the World Cheese Awards.
The Bruna Alpina is distinguished by the balance between quality and quantity of milk produced, which is particularly suitable for cheesemaking.
With a herd of about 750,000 head, it is the second most widespread dairy breed in Italy. More nutritionally rich, with a sweet and creamy flavor, we call this type of Parmigiano Reggiano, elegant.
Since its milk is denser, 50 more liters of milk are needed to produce one wheel than the Friesian, and the greater the capacity required of the cheesemaker during the spinatura and curd-breaking phases.
