BIANCO DI CUSTOZA DOC

This wine derives from grapes grown in vineyards in the municipality of Villafranca that were once cultivated by Capuchin monks. The grapes are harvested by hand at the end of September and cold-macerated for about 12 hours. The must ferments in stainless steel vats at a controlled temperature with cultured yeasts.

Bianco di Custoza is an innovative wine. In line with the
DOC regulations, which came into force in 1971, and
created in order to meet the modern taste, Bianco di Custoza was born of a balanced combination of delicately
aromatic white grape varieties, forever present in the Garda region. The term “Frari” with which Santi names its
Bianco di Custoza is meant as a tribute to the monks who, during the dark centuries of the Middle Ages, in the silence
of their monasteries, used to cultivate the vine and produce wine, a fundamental part of the Eucharistic ritual.

The grapes: 40% garganega, 25% trebbiano toscano, 20% cortese, 10% tocai, 5% Riesling.

The vineyard: particularly acclaimed parcels in the communes of Sona and Castelnuovo Veronese, facing southwest at 100 metres altitude where the climate is cool and airy and moderated by the influence of Lake Garda. The vineyards are trained mainly by the Guyot system on a morainic-glacial soil, with clay and limestone mixed with gravel. The yield per hectare is 120 quintals.

The vinification: the vintage takes place at the end of September with a mechanical vintager to facilitate a timed picking of very healthy grapes at the correct degree of ripeness. After the pressing, 30% of the grapes is subjected to a cold skin maceration in the press for about 12 hours. After natural clarification, the must ferments at a low temperature (12-16°C) with selected yeasts. The wine stays, cooled, in steel until January, in contact with its own yeasts and without undergoing malolactic fermentation.

The wine: soft, pale yellow colour; very distinctive bouquet, intense and fragrant, with strong floral notes (wisteria and peach blossom) and notes of white tropical fruits; a corresponding flavour, fresh and balanced, very savoury and with a delicate aftertaste of ripe fruit which lasts a long time in the mouth. It is an immediately pleasing wine to drink on all occasions and which, due to the quality of the grapes and to the careful vinification, can be kept for a long time, becoming enriched with interesting mineral notes.

Analytical details: 12% alcohol; 5.4g/l total acidity; 3.2 pH; 3.7 g/l residual sugar; 18 g/l dry extract.

Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.

Food matches: hors d’oeuvres, delicate first courses, fish.

Serving temperature: 12-14°C.
