VALPOLICELLA CLASSICO DOC

In the classico area of Valpolicella, among the communes of San Pietro in Cariano, Negrar and Fumane, there is a particularly celebrated zone known as “Le Caleselle”. Here the oenologists of the Santi Wine House in vineyards selected and nurtured under their control, choose the grapes from which Valpolicella Classico Le Caleselle is born. The production of this prized red wine, made with modern criteria while, at the same time, respecting the best Veronese traditions started in 1997.

The grapes: 65% corvina, 30% rondinella, 5% molinara.

The vineyard: selected parcels in the communes of San Pietro in Cariano, Negrar and Fumane, on well exposed limestone soil, with some clay and stones, and surface basalt. The vines are trained by the cordone speronato and
pergoletta Veronese systems. They have a yield of 110 quintals of grapes per hectare.

The vinification: the ripe grapes, picked by hand during the first ten days of October, are vinified by the red wine method with about 15 days maceration and different
temperature controls and remontages depending on the various structural and aromatic components. The fermentation takes place at a controlled temperature (20-28°C), with selected yeasts and in modern vinificators to
enhance the qualities of the grapes and of the vineyards of origin.

The maturation: the wine ages for a short time in casks of different provenances and sizes. It stays a few months in bottle before being released for consumption.

The wine: very deep ruby colour; strong bouquet of great elegance and finesse, very fruity with hints of cherry preserve and cloves; dry, well-structured flavour,
balanced and lingering.

Analytical details: 12.4% alcohol; 5.3 g/l total acidity; 3.42 pH; 3.9 g/l residual sugar; 26.8 g/l dry extract.

Optimum keeping: 2-4 years in bottles stored horizontally in cool, dark conditions.

Food matches: risottos and pasta with sauces of meat, liver and sausage; poultry; roast white meats.

Serving temperature: 18°C.
