La Tunella - Col Matìss Sauvignon

GRAPE VARIETIES:
Sauvignon.
Harvested at the right degree of ripeness, the grapes are cryomacerated at 4° C for about 36 hours and then softly pressed. The must obtained in this way is statically decanted cold and then added a foot of fermentation previously prepared (3-4 days before) with the best selected grapes of the same vine, then undergoes a slow fermentation and aging "sur lies" at controlled temperature with frequent batonnage in large barrels (30 hl) of Slavonian oak. Only after a final period of rest and refinement in the bottle will it be put to the consumer's judgement.

COLOUR:
Bright greenish straw yellow.

OLFACTORY AND TASTE NOTES:
The nose releases a rich and detailed aromatic parade with elegant vegetal and fruity notes: sage and mint, yellow peach and lychee; then exotic fruit and grapefruit with mineral ironing to give depth and further character. The sip is intriguing; the delicate flavor enhances the aromas and gives its contribution to the vibrant acidity that crosses the compact and agile structure and entices the next sip.

A journey among the Friulian Mounts with Tunella
Tunella was born where the cold and rigid winds of the Julian Alps meet the mild winds of the Adriatic Sea, which give rise to a contamination unique in Italy and beyond. The phrase "authentic hill art", which accompanies the logo of the winery, perfectly describes the result of this integration: a territory that is the exact middle ground between the mountainous and flat morphology. In turn, the production is faithful to the vocation of the territory, with 70% white grapes (which give life to white wines of great elegance, structure and longevity) and 30% red grapes, embracing both native varieties such as Ribolla Gialla, Verduzzo Friulano, Malvasia Istriana, Refosco and Schioppettino and international ones such as Chardonnay, Pinot Grigio, Sauvignon, Pinot Nero and Merlot. Tunella is also at the forefront of an eco-sustainable agricultural and production policy, which limits treatments in the vineyard to a minimum and uses clean energy from photovoltaic panels for activities in the cellar.
