Vino Spumante Brut

This sparkling wine springs from a cuveé of Chardonnay Trentino and Prosecco del Veneto grapes: the former confers fruity perfumes, acidity and body, and therefore freshness and longevity, while the Prosecco brings pronounced natural, attractive and characteristic aromas.

The sparkle is generated in special pressure tanks from which the wine is passed directly to the bottles using an isobaric process. This technique makes it possible to obtain a quality Spumante in which the varietal characteristics of the original grapes are exalted and confer an engaging smoothness.

The grapes: 80% chardonnay, 20% prosecco.

The vineyard: selected parcels of chardonnay in the valley of Arco di Trento, to the north of Lake Garda, and parcels of prosecco from the hills of Conegliano and Valdobbiadene.

The vinification: the grapes, picked just as they reach the optimum balance between acidity and sugar, are separately vinified by the white wine method, with a gentle pressing, cold settling and fermentation at 15-16°C with selected yeasts which enhance the varietal aromas; the fermentation is interrupted by refrigeration so as to leave the residue of natural sugar necessary to activate the sparkle; the secondary fermentation takes place in closed pressure tanks, at a controlled temperature and pressure; the bottling is effected with an isobaric system.

The wine: lively, white foam; lots of tiny bubbles; bright, pale straw colour; full and fragrant bouquet with strong notes of aromatic musk and ripe Golden Delicious apples, and with hints of candied citron, lime tree blossom and bread crusts; soft but fresh and lively flavour, very well balanced, with a gentle and pleasant, lingering, fruity aftertaste.

Analytical details: 11.5% alcohol; 6.5g/l total acidity; 3.10pH; 9 g/l residual sugar; 19 g/l dry extract.

Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.

Food matches: as an aperitif and with meals with all delicate food (excluding pastries).

Serving temperature: 6-8°C.
