Roma Doc

A wine of powerful aromas, in a typical expression of this indigenous grape.

It is a wine with a pronounced bouquet, with a definite fragrance of aromatic musk; the flavour is full and soft but firm, fresh and balanced, with a clean and pleasant, slightly bitter, lingering aftertaste of almonds.

The grapes: 100% malvasia puntinata del Lazio

The vineyard: selected parcels on the hills around Rome, in the districts of Frascati, Monteporzio Catone, Montecompatri and Grottaferrata, at between 200 and 400 metres altitude. Loose and porous, dry but not barren volcanic soil is typical “terrinella” (pozzolana, rich in potassium, phosphorus and microelements), ideal for growing vines. The training systems are the spalliera, the Guyot and the cordone speronato.

The vinification: the grapes, picked in just the right state of ripeness, only in the coolest hours of the the morning, towards the middle of October, are immediately vinified by the white wine method, with a gentle pressing. The young must, cold settled, ferments for two weeks at a controlled
temperature (15-18°C), following the addition of a “pied de cuve” (starter must which is already fermenting) prepared with selected indigenous yeasts. When the fermentation has finished the wine stays two months on its lees at 18°C, with frequent tasting checks, then follows the racking
and the blending of the wines which develop in temperature-controlled steel tanks until they are cold sterile bottled. The long period on the lees – as used to be the practice – enriches the bouquet and the flavour; the wine undergoes a partial malolactic fermentation which makes it even softer and more fragrant.

The wine: very bright, golden colour; well defined bouquet, with a distinct fragrance of aromatic musk backed up with traces of ripe bananas, sage and hawthorn blossom; full, soft but well structured, fresh, balanced flavour, with a clean, pleasant, slightly bitter, lingering aftertaste of almonds.

Analytical details: 14,00% alcohol; 5,00g/l total acidity; 3.35 pH; 2.5 g/l residual sugar; 22 g/l dry extract.

Optimum keeping: 1-2 years in bottles stored horizontally in cool, dark conditions.

Food matches: creamed and puréed vegetables, pastas and risottos with rich sauces, shellfish and fish.

Serving temperature: 12°C.
