The vineyard owned by Fontana Candida estate extends for about 13 hectares in the hills of volcanic nature in the locality of Santa Teresa, between 200 and 300 meters altitude.

Produced from Malvasia puntinata del Lazio and di Candia, Greco and Trebbiano it is a cru of outstanding finesse, with a delicate bouquet and a full flavour, soft but fresh and lively.

The grapes: 50% Malvasia Bianca di Candia, 30% Malvasia Puntinata Del Lazio, 10% Trebbiano Toscano and
10% Greco.

The vineyard: this extends over 13 hectares on the southward-facing hills at an altitude between 200 and 300 metres in the Santa Teresa locality in the commune of Rome. The vines are trained using the Guyot, spurred cordon and cazenave system.

Vinification: the harvest differed depending on the grape variety and on the basis of the ripening curves: the malvasia first, followed by the greco and finally the trebbiano. Soft pressing was followed by vinification off the skins for trebbiano and greco, while the malvasia was left to macerate cold on the skins for 12 hours. After static decantation, the must ferments at 15-16ºC with selected yeasts.

The wine obtained in this way ages in temperature-controlled steel vats until bottling which takes place at the beginning of May.

The wine: the colour is light gold; the perfume is delicate but well expressed with delicate floral notes and with hints or sage and of apple; the flavour is full and smooth, but fresh and lively and very sapid, with a distinct finish of pleasantly lingering almond. It has particularly refined qualities.

Analytical data: alcohol 13.50%; total acidity 5.20 g/l; pH 3.30; sugars 2.5 g/l; extract 22 g/l.

Ideal conservation: 2 years in bottles on their sides in a cool dark environment.

Food pairings: hors d'oeuvres, starters, fish and cold white meats.

Serving temperature: 10-12°C.
