Vernaccia Di San Gimignano DOCG
This white wine, of exceptional quality, was the first Italian wine to obtain the DOC, and is today a DOCG.
Grapes: 95% vernaccia di San Gimignano, 5% complementary varieties.
Vineyard: selected parcels from amongst the most acclaimed of the hills of San Gimignano, at 250 metres altitude. The vines, trained by the simple Guyot and doppio capovolto toscano systems on well exposed terrain of Pliocene origin, with yellow sand and sandy clay, produce 90 quintals of grapes per hectare, with a yield of wine restricted to 65%.
Vinification: the grapes, picked during the last ten days of September, in the correct state of ripeness, are vinified by the white wine method, with a gentle pressing; the must,
after cold settling, ferments with selected yeasts at 15°-17°C.
Wine: pale gold colour, with green tints; fragrant bouquet of broom blossom with hints of ripe pineapple and flintstone; dry, full and savoury, clean and balanced flavour with an elegant, pleasantly lingering aftertaste of vine peaches and almonds.
Analytical details: 12,55% alcohol; 4.98 g/l total acidity; 3.26 pH; 2.2 g/l sugar; 19 g/l extract.
Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.
Food matches: hot hors d’oeuvres, shellfish, fine sea and freshwater fish and cold white meats.
Serving temperature: 10°-12°C.
