Slightly before full maturation of the vines in order to obtain the desired alcohol content.

Slight hillside near the sea.
Maturation:
Once the grapes arrive at the winery, they are cooled down to a temperature of 7-8°C. It follows a slight pressing and the must thus obtained is then decanted for 12 hours in steel tanks at controlled temperature, so the wine clears. After then follows the re-racking and the wine is left to ferment at a controlled temperature of 18-20°C. Through constant and careful controls further operations are carried out in the wine cellar. The wine is filtered and fermented again in the autoclave. Under pressure, the desired qualitative characteristics develop.

Pale straw yellow with greenish tinges.
Nose:
Fresh aromatic profile, floral bouquet with light fruit flavors of unripe citrus.
Taste:
Fresh, pleasantly carefree and appealing.

Spumante Extra Dry.

Best to be enjoyed in the year after the grape harvest.
Drinking temperature: 6-8°C.

12% depending on the vintage.

Food pairing:
Excellent as an aperitif, excellent with appetizers, raw fish, shellfish, sausages, light cheeses with jam and honey. Suitable as an appetizer in restaurants because the bubbles last long. Even if the bottle is left for some time, the product remains bubbly because the mousse lasts longer compared to other wines.
