Cannellini and Borlotti beans, spelt, chickpeas and lentils: a selection of top quality cereals and legumes which are perfect for the preparation of “minestrone”, soups, creamed soups, salads.
“Fagiolata” with Borlotti beans

Ingredients (serves 4): 250g Saluggia Borlotti Beans, 125g rind, 200g tomatoes, 30g butter, 3 tablespoons extra virgin olive oil, 1 onion, salt, pepper.

Preparation: Soak the beans for 12 hours in 800ml water. Put in a pan the beans, the sliced onion and the rind; cover with water and cook for 1 hour. In a separate pan cook the diced tomatoes in the butter for 10 minutes, add salt and pepper. Once ready, drain the beans and rind and cook them for other 30 minutes together with the tomatoes. Perfect to be served with Polenta.
