The intense aroma and delicate flavor of our tomato purré using methods that have been passed from generation to generation. This tradition was now brought back to life through this purré, which is produced according following the old recipe of our Tuscan culinary and agricultural traditions.

Ingredients: tomato, basil, salt

Recipe

Fusilli with tuna tomato sauce

Ingredients:

- 500 g fusilli
- 250 g tuna fillets
- Organic tomato passata "Bio Colombini"
- 100 gr olives
- 50 gr capers
- A cup extra virgin olive oil
- Salt and pepper
- 2 clove of garlic

Preparation

Fry the garlic in a glass of extra virgin olive oil, add the tuna and sauté for a while. Then add the tomato passata, olives and capers and cook on a low heat.

In the meantime, boil the pasta, drain and toss in the pan with the sauce.

The Organic Tomato Sauce BioColombini celebrates the culinary tradition of our grandparents. Once the fresh tomatoes were harvested their cooked in a very big pan put on the fire in the middle of the yard, in order to have it all winter long. The tomato sauce differs from the tomato for the use in the cuisine. Despite they share the same high quality ingredient the sauce is better for food that require long cooking. Our sauce, prepared using hand picked tomatoes, has an intense aroma and the delicate taste of the Tuscan tradition, the region where all the ingredients are cultivated and processed. The tomato pulp, is prepared with the same raw materials, following a different traditional process, where the product is worked as soon as it is harvested the lowest possible time. For this reason its taste is particularly delicate and fit for the summer recipes and in general for short cooking (for example bruschetta or pizza).

Bicolombini: Biologic certified agriculture
The Agricultural Company Colombini was born at the beginning of the 20th century jn Crespina (Province of Pisa). The two world wars, the agricultural exodus, the industrialization, the passage from the traditional agriculture to the chemical one: those are the passages that have marked this company until 1998, the yer in which the company converted to biologic agriculture. Nowadays the company works within 18 hectares of land, 15 go these grow vegetables, 1 fruit and 2 olives, all of them are rigorously bio-certified. During the years of the biologic conversion, with the help of the social services, public authority and other local companies, several orto-terapeutic projects and of work integration of people socially disadvantaged have been started.

The company BioColombini farms all the 18 acres of land belonging to the farm. On 15 acres we grow vegetables, 1 acres belongs to the fruit gardens and on 2 acres we have olive groves. All carry the organic certification.
