This olive oil is intense green, clear and has a good viscosity. The nose is clear with notes of freshly cut grass, fresh thyme and white pepper. Complex with a good structure on the palate with notes of artichoke and a long, balanced finish with bitter and spicy notes.
Recommendation
Ideal with swordfish or carpaccio. Excellent with grilled meats, soups with legumes and Ribollita. Or simply on bread.
To taste the full flavor spectrum, we recommend to try the raw oil.
