Bagos is a cheese made from partially skimmed cow's milk. The maturity period is between 12 and 36 months. During the ripening period the rind is oiled with linseed oil, so that no mold forms and the bark gets elastic.
The cheese is straw yellow, the taste is strong, slightly spicy and full-bodied. This cheese is a typical mountain cheese that is produced in the territory of Bagolino (in dialect Bagoss).
The Bagos cheese is a slow food product. It is ideal as a table cheese or grated. Ideal as filling for ravioli or as an ingredient for risotto dishes.
