HISTORY
In ancient documents we read of animals with black bristles, large floppy ears that fall over the eyes and an oval head with a straight snout.
The Calabrian black pig is practically wild bred in large enclosures. Because of the much movement, it grows very slowly, so its flesh is all the more palatable. Pigs of this breed are about 14 months old at slaughter.
Because the animals live in the open air, they are less often sick. They receive no antibiotics or other medicines. So the meat is very healthy.
