Risotto of black Venus rice with wild mushrooms and San Daniele ham
18/10/2012 - Ingredients for 4 people: - 250 gr black Venus rice “Principato di Lucedio” - 500 gr mushrooms (Chiodini) - 4 slices of raw San Daniele ham - 1 clove of red garlic - Extra Virgin Olive Oil Erbesso “Oleificio Gulino” - Parmigiano Reggiano - salt - pepper

Ingredients for 4 people:

- 250 gr black Venus rice “Principato di Lucedio”
- 500 gr mushrooms (Chiodini)
- 4 slices of raw San Daniele ham
- 1 clove of red garlic
- Extra Virgin olive Oil Erbesso “Oleificio Gulino”
- Parmigiano Reggiano
- salt
- pepper

Cook the black Venus rice in plenty salted water for 40/45 minutes.

Fry the crushed garlic clove in extra virgin olive oil, add the mushrooms and cook for 30 minutes.

Cut the ham slices roughly into strips fry them for 20 seconds in a pan with a little olive oil. Add the mushrooms and 2 tablespoons of grated Parmigiano Reggiano.
