Ingredients for 4 people:

- 250 g "Etrusca" tagliatelle "Pastificio Caponi"
- organic Extra Virgin olive Oil "Il Vecchio Maneggio"
- vegetables (carrots, eggplant, zucchini, onion, green beans, etc.)
- Parmigiano Reggiano aged 36 months
- salt from Trapani
- Pepper

Dice and the vegetables and place them with plenty of olive oil and salt and pepper on a baking sheet. Bake for 40 minutes at 200 ° C in the oven. Stir occasionally.

Cook the tagliatelle for about 5 minutes until al dente. Mix with the vegetables and serve with plenty of grated Parmesan cheese.
