If you have left over some polenta from the previous, you can make a delicious dish of it:
Cut the polenta into 2cm thick slices and add the sausage and some butter and olive oil in a pan. Fry for about 10 minutes.
Add the egg whites of 4 eggs, each with a bit of 'Nduja in the pan and cook the dish for another 3/4 minutes. Then add the egg yolks and cook for another 2 minutes. Season with salt and pepper and add the grated Caciocavallo.
