Lemon cake with Leonforte peaches and Amaretti crust
21/11/2012 - Ingredients: - 250 g + 100 g sugar for the syrup - 720 g pickled peaches in syrup Leonforte “Agrirape” - 10 amaretti “Corsini Biscotti” - 150 g of wheat flour - 150 g cornflour - 4 eggs - 170 ml milk - 100 ml sunflower oil - 3 untreated lemons - 1 sachet baking powder - 1 pinch of salt

Ingredients:

- 250 g + 100 g sugar for the syrup
- 720 g pickled peaches in syrup Leonforte “Agrirape”
- 10 amaretti “Corsini Biscotti”
- 150 g of wheat flour
- 150 g cornflour
- 4 eggs
- 170 ml milk
- 100 ml sunflower oil
- 3 untreated lemons
- 1 sachet baking powder
- 1 pinch of salt

Preheat oven to 170°C.

Split the eggs and beat the egg yolks with the sugar.

Add the milk, the flour and cornflour into the dough. Mix the egg whites until frothy and add to the dough. Stir in the oil.

Rub the lemon zest and add with the salt to the dough.

Finally, stir in the baking soda.

Pour the dough into a mold. Add the peaches in syrup on top of the dough. The peaches sink to the bottom of the mold.

Crumble the amaretti and sprinkle over the dough surface.

Bake for 50 minutes in the oven.

Squeeze the lemons. Add the juice into a small saucepan and melt the 100 g sugar in it over a low heat.

Remove the cake from the oven, make hole with a fork and soak it with the lemon syrup.
