Its main feature lies in the expanded leaves with slightly accentuated ribs, jagged edge and slightly wavy flap. Beautiful in shape and beautiful in colors with creamy white leaves, it stands out for its sweet and pleasantly bitterish taste, very fresh and delicate. It is particularly rich in calcium, iron, phosphorus, magnesium and with a high percentage of vitamins A, B2, C and PP. Its origin is due to the cross between the Treviso radicchio and the escarole, the production is complex and must be precise in the times and in the techniques. The harvest begins on the first of October, followed by the processes for bleaching that allow to obtain the taste, the crunchiness, the colors and the shape that make this chicory so special.
