Cannara onion is recognized as a traditional agri-food product (P.A.T.) by the Italian Ministry of Agriculture, Food and Forestry. In addition Cannara's onion has been recognized by the Slow Food Association as Presidium until 2007 and as the Ark of Taste until 2008.
Cannara onion has three distinct varieties: red, golden and borrettana, but all three are characterized by a sweet, soft flavor and easy digestibility.

Sliced the thin onions and cook them with oil, salt, pepper and a few spoonfuls of hot water.
In a sufficiently large pan, fry the bacon cut into small pieces on a very slow fire, so keep it tender.
Meanwhile, cook the spaghetti and then pour them, to the tooth, in the bowl containing the bacon.
Add the onions already cooked, seasoned and add the beaten eggs, with the grated pecorino
