Consorzio Nero di Calabria is listed in the famous culinary specialties guide "Gambero Rosso" with its 'Nduja from the black pork. It contains no preservatives and antioxidants. The pig breed "Suino Nero di Calabria" (black Calabrian pork) is threatened with extinction because the animals are not very fertile and grow very slowly.
