Parmigiano reggiano millesimato 30 months Gold label
The Parmigiano-Reggiano DOP Millesimato is made from the milk of cows that have given birth to a calf recently (max. 100 days).
This milk has very special properties. It can, for example, coagulate spontaneously and without the addition of rennet. Thus, a cheese can be produced without needing to heat eccessively the milk. Thus, the bacterial flora remains intact and the cheese is bright yellow and has a particularly intense flavor.
In the farm Bertinelli the cows are feeded with the best food. So the cows in the barn receive the necessary nutrients that they would receive in the pasture.
