The firm, availing itself of the secular experience of the Caroli's family, in addition to the olives of its Masserie "Monte Trazzonara" and "Pizzo Mammarelle", selects even the olives of the nearby areas.
Besides the company boasts a limited production of the "SURFACING" olive oil (about a 10% of the total production), which is well recommended in the diet of the first childhood and for very prestigious dishes.
